I know a lot of people struggle with restrictive eating and one of the things that I have found tremendously helpful is making my food as attractive as possible.  Using simple things like chopped fresh herbs or spices to top your final dish can go a long way.  Also laying out on your plate carefully instead of just slopping it on the plate can change how you perceive your food.  

Treat yourself to things you don't normally buy!  Such as some scallops!  You are not spending your money on tons of junk and middle of the store items that are full of empty calories so why not buy some of the things you love!

Having simple meals can be boring but if we can make them look like restaurant meals, then we engage our sight as part of the anticipation!

Sometimes I prefer very simple meals such as this Grilled Beef Skewers with Grilled Boy Choy and Curry Peanut Sauce.




The peanut sauce is a challenge when cooking Low Carb and Low Fat.  The lifesaver are products like PB2 or PB&Me.  Both of these products are Powdered Peanut Butter, with most of the fat removed.  I used PB&Me which I found at The Great Canadian Superstore, but PB2 can also be found at Healthy Planet.

I used Beef Sirloin and marinated overnight with finely chopped garlic, pepper, greek seasoning (my own herb mix), olive oil, a small amount of lemon juice and a little water.

Peanut Sauce

1 tbsp peanut powder
1 tbsp water
1/4 tsp sesame oil
1/2 tsp garlic paste
1/2 tsp curry powder
Pinch black pepper
1 tsp sodium reduced soy sauce
1/4 tsp lime juice (or lemon)

All of these can be adjusted to your taste.  Mix 1 tbsp water with the peanut powder and then add all the rest of the ingredients.  Store in the fridge until ready to use.

I used a Korean grill, which sits directly on the burner.  

Using thin strips of meat, thread them on your skewers.  Spray a small amount of olive oil and grill your meat and bok choy.  Cook meat until cooked through.  Cook bok choy until desired doneness.  I still like a little bit of crunch.

Topped with the peanut sauce drizzed over the meat or both and finely chopped chives or green onions and serve!  Enjoy!
